I've had profiteroles in several different restaurants in France at different gastronomique levels that are filled with ice cream. I'm not saying it's right to have profiteroles with an ice cream filling, but it does seem to be a common thing to do.
I even went to a posh brasserie where the profiterole choux pastry was made to look like swans - the filling was ice cream!

One of my personal food prejudices is that ice cream has no place as a dessert. A snack yes (ideally fresh gelato), but should only be eaten as a dessert by children and Americans.
However, ice cream on its own is one of my favourite desserts!
