Highly unlikely I know... but I believe that's the reason behind the rule.
On such a long flight... I don't think your seatmate would be that bothered by getting up twice.
Okay, that makes sense, I guess. I've never been in turbulence however where the FAs asked people to stow their laptops though, particularly on trans-Pacific, I'm sure that can happen.
