I don't take enough flights that serve meals to give you a very educated answer but I would think it would depend on the flight. When I flew YVR-KIX, even though I can't remember the exact meal, I'm pretty sure it was thai style food, definitely not indian. (When I flew JFK-ORY 2 weeks ago on Open Skies, I did get indian food (including paneer), but that's probably because the French don't know what vegetarian food is. Just kidding, and before anybody slams me, I am French, OK!)

On my last DEN-YYZ flight, I was served a nice couscous and grilled vegetable starter, and then chicken for the main course.

Oh and here'a a tip: Do not order a vegetarian meal on a breakfast flight on an Embraer. You get a frozen McCain juice box, a small cup of frozen fruit cocktail, and a small hard white bagel all served in a cardboard box. I've had this 3 times over the last 1.5 years and complained every time. You'd think I'd learn. By contrast, the regular meal usually includes a choice of a nice fruit and yogurt plate served on china.
