Hi tom139,

The main reason is the pilots night vision. You will find that a lot of the instruments will either be a red, orange or green colour (display or light around them).

If a door is suddenly opened and you get a bright light, it can take a good few seconds for your eyes to readjust.

This sort of thing is also on ships and submarines in order to preserve their night vision as well.
