Not a dr. or lawyer

but just an outside observer. It would make sense to me that the FA declares in front of witnesses or signs a paper with other FAs as witnesses that he/she is in no way authorizing/approving on behalf of AA or anyone else, this claimed medical professional to assist in helping the distressed passenger. The medical professional assists the passenger in the same way as if he saw this person pass out in a public thoroughfare. I don't see how AA could be sued if anyone tied up all the FAs and helped the patient w/o their consent. So the FA could announce, we are informing you that there's a patient in distress and any medical professional who could assist please feel free to do so but for legal reasons we cannot authorize this and understand that you are doing so under your own volition and are 100% responsible for your actions. If some regular guy shows up and screws things up, I don't see how AA can be responsible anymore that if it happened on the street below. But hey I'm no lawyer... Praise the lord.
