Here is what I ended up doing:

AMEX transfer to SQ for SFO – HKG – SIN – MLE

We will make a stop in HKG for 3 days then head to MLE for a week at Soneva Gili on FHR rates.

Will end up using AMEX points for the hotel – it pains me to do it (1 : 1) but seems to be a great hotel.
