Thank you all for your reply! I will try to keep both the leather folder and menu!

Also, for F BTC, is pan-seared pheasant (1st meal) and nigiri sushi (2nd meal) from LAX a good BTC choice? Abalone with mushrooms from HKG is good too?

Any suggestions for ex-SIN and ex-NRT (Kyo-Kaiseki?)? I can't order Lobster Thermidor since I am allergic to shellfish.
