Eric Beaumard has been with FS George V since it opened under the FS banner. He is a lovely eccentric character with taste buds to die for. He is always inventing something new, like tea tastings, and is very visible in Le Cinq, as he acts as restaurant manager, not just sommelier (there is a team of sommeliers under him - many of whom have also won awards). You can always request a show-around/wine tasting in the cellars when you book, although I think it helps if you are a suite guest or are bringing a small group. The cellars are pretty impressive. The best thing about their purchasing policy is that they never buy wine for investment, but always to drink! Eric loves to perform - like opening a vintage bottle of port with a huge pair of bolt cutters; severing the neck cleanly from the bottle so that the cork never contaminates the wine. He is one of the greats.
