We did a Disney Cruise last May. Get in the day before since the que to get on probably started around 9AM, and you will want to get on early to explore. MCO is only about 45 minutes from the ship, we could have made it to the Airport by 9:30AM after departure, so any flights after 11ish should be safe. We had a rental car, but most people took the Disney busses back to the Airport.

Cheap Priceline rooms around the Airport are a dime a dozen.
