Last week on my LHR-ORD segment I was on a full F segment and the FA came to me first to ask for my choice (seat 3A) before anyone else. Second, they rarely run out of choices other than the pasta. Third, if they don't have your choice they can usually make a plan. For example, yesterday on FRA-DFW they didn't have the beef sandwich for the arrival meal for me because I was in the bathroom when they came by but went to J class and got one for me from them.
