I am a huge Four Seasons fan, but the new Mumbai hotel is not one of Four Seasons' best, apart from its 2-level restaurant San Qi. The hotel is in the Worli district, which is a burgeoning business area. It is quite far from the Arabian Sea, so the views are of slums and not much else.
Currently, the best option in Mumbai is the Palace wing of the Taj Mahal Palace & Tower. Ask for one of their fully refurbished suites or rooms (the Harbour Suites are coolly contemporary and very comfortable). If you just want a room, then ask for a sea-facing room in the Palace Wing (do not stay in the Tower, which is a quite different hotel).
The food here is excellent, with a big choice of restaurants, from Indian to Japanese. Service is very good, too, with German Hotel Manager, Birgit Zorniger, who used to be Manager at the Mark New York.
A unique experience that I would really recommend is to book a dinner or a lunch at The Chef's Studio. It's expensive, but you get to watch them prepare whatever type of meal you choose, and it is then served to you alone (up to 8 people).
The Taj is very central for sightseeing. You can get a boat right outside the door to Elephanta Island (Taj have their own motor yacht, too) and the hotel will arrange very good drivers and guides so you get to see the best sights and shop in the most interesting places.
This is by far the most civilised option in Mumbai.
The hotel also has the best outdoor pool in Mumbai, in a very lush garden setting, which is much nicer than the FS rooftop pool.
