If I were on the flight, I'd have preferred your husband to be more insistent about his seat, since it could make a difference to safety in an emergency.
I'm also a bit surprised the FA didn't already notice the problem. Or maybe they did, but were afraid of offending the guy by mentioning his size.
Unfortunately hubby's ticket had his original seat assignment on it, not the exit row seat number. You're right, in retrospect it would have been good for him to raise the issue with the FA. At the time, I think, he was reluctant to offend anyone, just as you say.
