You're right. Ultimately, airlines are commercial operations which are in business to make money. They will do so in the most efficient way possible - and if they decide that the product won't suffer without meals, then no more meals. The same thing applies to all other frills - RyanAir have done away with window shades and reclining seats to save money and fuel (by reducing weight) and people STILL buy their tickets.
I know it sounds cynical, but airlines will only include the bare minimum aspects of the product in order to justify the prices they charge. Anything more than they can get away with is an unnecessary cost.

Why do we expect the airline to feed us on a short flight? I know it is a nice thing, but you don't get a free snack on board the train or the bus. On long routes I understand it.
You get free snacks on some British trains.
