If you're making a mid-week trip, then it's probably safe to arrive, check the weather map to find the best locations at that time and head off to see them. The places with "leaf" marks on this map are known for beautiful foliage, but we can't know at this stage which ones will be at their peak during your visit:

My personal favorite kouyou memories... iroha zaka in Nikko (but beware the traffic jams) and the Arakawa valley in Yamanashi. (although the Shosenkyo is more spectactular and more famous).
