Last time I was in Rio I rented a car and drove down the Costa Verde to Paraty and Trinidad. Along the way I stopped at a small distillery and picked up some of their very authentic cachaca. They ran me through the distilling process and let me try all sorts of varieties. I must say that the allure of cachaca seems to miss me entirely. There's better stuff out there to mix into drinks and that includes caipirinha if you must. (ie: why caipirinha when you can do southside, mint julep, or at worst mojito...)
