Of course they know where a flight is going once they have been assigned to it, but reserve FAs or those who have misconnected are sometimes only assigned flights at the last minute. FAs thus don't always know how long their work day is to be or where they'll end up at the end of their day until it's too late to determine what they should pack or otherwise acquire to eat.
