I believe it is a US thing. If you stay for longer than a certain period it is no longer a hotel stay but you establish some kind of residency which is (to my believe) even no longer subject to certain taxes.
However, what you can always do is to check-out for a day, stay a night in a different place and check-in again the next day.
it's not a US thing, Marriott (and to my knowledge Hilton but I could be mistaken with Hilton) have always awarded points regardless of length of stay
