At home I go to Dream Dinners or Dinner's Ready once a month and make up 12 - 15 different meals (each serves 2, 3, 4 or 6, your choice) which I store in the freezer, then defrost as needed during the week. If you're not familiar, these are commercial kitchen establishments where you "assemble" your meals of choice at a scheduled session. It usually takes me less than two hours to make 12 meals.
If I'm on a business trip involving several days in a hotel with kitchenette, I'll pack several of the 2 or 3 serving frozen meals to take with me. Quick, easy and nutritious. By car - no problem. Travel by air, and do whatever you need to do regarding TSA and the liquids vs frozen solid controversy. Check them in a cooler bag in your suitcase, or risk carrying them on and declaring them medically necessary special dietary foods. I have carried them on in a gel pack with prescription medication and syringes I also need, and have not had any confiscated (yet).
