My wife makes a killer lentil corn stew -- tomatoes, lentils, herbs, garlic, onions, corn -- add a splash of chipotle or a killer hot sauce (like Mild to Wild's Savina Garlic sauce).

I'll get the recipe and post it here if anyone's interested. A little shredded cheese on top... mmmmmmmmmm.
