Well, my experience doesn't start in Texas, but I typically fly SFO-HKG every December. In the past, the S fare would usually disappear the 2nd week in December, but who knows if S fares will even be available this year!? So I think a V fare is reasonable, given a departure date of the 31st.

I think it depends. If you're delayed on the first leg, and miss the connection in SFO, so that you are rebooked for the 1st, then I believe you'll need intervention. If you make it to SFO in time, and then 869 goes mx, then I would think you'll be ok.

Uh oh, I'd better qualify that. I think you'll be ok, as long as 869 doesn't leave so late as to cause another flight number to be assigned. So, for example, I think your miles will be ok with an 8-hr delay, but a 24-hr delay will probably foul things up.
