Most has been covered above, but as someone who has been doing FRA - ARN multiple times a month for the past three years, here is my 2c.

1. It is not great but no worse than any other economy in Europe and for two hours you wont be particularly uncomfortable.
2. All the flights are code shares either SK or LH metal and there is a difference as noted above in catering with LH being much better. Since you are on a 737, you must be on SK metal. You should dine in the Senator Lounge to avoid paying for food on the flight (though the SK BOB food is quite decent, just not free). You should OLCI to choose your seat, seats are not allocated ahead of the opening of OLCI, so doing this as soon as possible after it opens up is highly desirable. If you need to change or see if anything better has opened up, the agents in the Senator Lounge can handle it and are usually very helpful.
3. In three years as UA 1K and now also EBG, I have never had an op up from LH or SK economy on any route (including over the years every booking class from W to Y), never seen anyone else get one and never heard of one from any Swedish or German colleague. As mentioned above, there is no other way to get an upgrade.
