Why not offer both the dispensers AND the usual bottles? Customers suspicious of multi-use dispensers can use the personal-sized bottles, and those so inclined can use the dispensers. Simply post a sign expaining the presence of dispensers.

Quite frankly, I enjoy taking the new Sheraton toiletries home I prefer bar soap and use my leftover mandarin mint Bliss bar soap at home.

I've read that upscale properties do not use dispensers because customers perceive them as being "cheap." Offering both modalities can solve this problem. This should also reduce items for housekeeping to replace as the dispensers don't need refilling each day.
