Hyatt website does not seem to provide any info on this hotel, if it's ever going to be one.
Also, Hyatt does not seem to update their new hotels any more.

Further to above...I just recently heard from someone at Grand Hyatt Hong Kong that the land for the Hyatt Regency Sha Tin building had been contributed by Chinese University HK, and that the hotel was to be used as a training school. Exact details were not available, but I somehow doubt that an entire hotel would be built just for training. My guess is that CUHK would be sending their students to this Hyatt for on-the-job training, but that it would still operate as an actual hotel.
