Yes, I agree it probably is to do with this. Although I think that having a made to order menu feels more 'premium' if you know what I mean. Personally, I'm not a big fan of buffets because the food tends to get left out for a long time and lose its flavour/become soggy/infected. The few times I've been ill whilst travelling, it almost always comes back to a buffet -so I tend to avoid them if I think they have been left for a long time. Having said that, I would guess that they're not really made to order, rather just stored somewhwere behind the scenes and then just produced on request. Also, the T5 buffet was normally good quality and because the buffet items were quite small, they were replaced quite frequently.
