Park Hyatt really doesn't have any restaurants that are notable; the Rooftop Bar was popular (well, among the over 30 crowd), but they have changed the configuration of the patio a bit, so it's not as good as it used to be. Rooms are completely bland.
Germain had a great Italian restaurant that has been replaced with something that isn't as good, but still better than most hotel options.
FS still has Truffles and Avenue - Truffles at one time was a pretty good restaurant, but there are lots of other options. Avenue is notable because there is a hilarious scene of sorts comprised of tourists, local ladies who lunch and the very occasional celebrity.
Nothing at the Fairmont worth noting.
The Soho Metropolitan has perhaps the best hotel restaurant, a place called Senses, but the hotel itself is blah.
I've heard Mark's two restaurants (North 44, Bymark) are exceptional (and a great value in comparison to other high-end, high-profile restaurants in big markets like NYC and London) . What is the difference between the three (including the lastest establishment, ONE)?
I do agree with on the rooms of the PH being, "bland". They aren't bad, just lack in the decor department. The bi-level suites are cool (though they have a bit of "blandness"). When did they change the patio layout? The view can't be beat, and I've always like the "James Bond" decor/feel it has. Not a fan of Annona? Never ate there.
I know Truffles is more of an classic establishment in all aspects. I wonder how FS will handle the F&B in the new hotel.
