From what I've heard about "The Foundation Room" at Mandalay Bay, it seems it might provide exactly what you're looking for. Great view, more mature crowd, classy vibe, still-contemporary music, delicious $14 drinks

It is apparently quasi-"Members Only", though lots of Yelp reports mention getting in after asking their waiter/sommelier to get on the list.
