Yes.  You can have 2 esims active or just disable your home esim if you do not want to configure IMS.  You can check messages on the hotel WiFi. To verify your iPhone is unlocked for multiple esims.  Go to settings, general, about, carrier lock to verify the message is “No SIM restrictions”
