I went with the red snapper that I allegedly pre-ordered (even though my pre-selection was sea bass), and it was completely inedible. The presentation was unappealing, but worse than that, this fish could not be cut through with a fork or knife...it was complete rubber and it left the tray just as it was presented, albeit with stab wounds from my earnest attempts to cut a piece of it to try. I tasted the risotto and it was just OK...
