Flying to Denver in November for a long weekend with the spouse. Anything I should know about the airport or town? What things should we look into doing while we are there?

No one can really give you a definite answer until you tell us what kinds of activities you like to do.

You could spend the whole long weekend inside microbrewery tasting rooms across the front range.
You could go hiking or biking--maybe in shorts, maybe in snow gear, maybe in both the same day/weekend.
CU has two home games in November. NBA and NHL will also be in full swing.
You could chill all weekend and take advantage of Colorado marijuana laws.

I was surprised to find how far out of town the airport is from Denver proper. It seems to be a good 15-20 miles outside the city.

Just getting from the terminal to the nearest interstate is nearly a 15 mile drive.

It's in the middle of nowhere, but that's also by design. DEN sits on 54 square miles of land—twice the size of Manhattan—and more than any commercial airport in the world, giving it ample room for expansion without needing to buy up any neighboring properties.
