LIM is indeed considered Polaris, but when I flew it in February 2019 and (early) March 2020, the meal service was a weird hybrid of pre-Covid Polaris, PS, and domestic F standards:
Plated appetizer and salad (similar to Polaris)
Three entree choices (southbound) or two choices (northbound redeye), all plated on board on circle plates (similar to PS)
Dessert choices of sundae with limited toppings (similar to some long domestic F flights like BOS-LAX) or cheese plate
Light plated snack before arrival--can't remember exactly what it was.

All Polaris ex-US flights except Delhi/Tel Aviv have the same Short Rib / Salmon / Ravioli entree options as above in thread for April as we had in March. A limited number of FRA test flights have same entrees but different dessert service (mini pies, ice cream, cheese instead of the horrible gelato/sorbet cup).

PDB was water/bubbles
Shortly after after take off, the drink cart emerged! Ordered a G&T and was offered nuts as an accompaniment

Dinner choices were short rib with mashed potatoes , salmon with wild rice and burrata ravioli.
short rib plate was just warm enough to eat but should have been much hotter.

Breakfast was oatmeal or the egg and tomato thing.

Purser said they are slowly getting back to full service and apologized for the entrees being the same as the first quarter other than they switched the starches between the proteins.
Great service and an awesome crew.

No service updates. It will be the same service flow/standard as others have posted. Service enhancements are being trialed on select routes, and your routes unfortunately didn't make the cut.

Both of my Polaris flights end of May ORD-DUB and LHR-ORD now say check with operating airline for meal. How friggin hard would it be to just say what it actually is, Im presuming dinner, breakfast and lunch, snack but who knows what UA has up its sleeve for grub here?
