How about the Salton Sea? It’s a bit deeper than the Great Salt Lake, and visible between LAX and IAH.

Bingo!

Another clue is that there are some lights/human activity along the shore but not much. It's shoreline is similar in shape to Lake Tahoe - which is what I originally thought when I'd been going through my photos - but it would have been lit up a bit differently - and on the other side of the plane relative to dawn.

Lake Mendota maybe but it seems like should have been higher in elevation by then.

The last time September 28 was a Friday was 2018.

Someone else already guessed LAX, which was going to be my thought as well although I don't see anything obvious in the reflection that screams that. It really doesn't look like SFO, so my only other thought would be PSP, as I don't recall exactly when they killed the PSP-LAS service. The flight times scream PDT.

A 27xx flight number to HOU sounded like a charter originally, but I didn't see any obvious sporting events in Houston the following day. An MLB series wouldn't end on a Friday; Rice was on the road and UH was off that weekend. So it must be maint related, which means it could be anywhere (that could have a UX flight to LAS I mean

So, I actually did a little more sleuthing but I didn't want to ruin the game for anybody else. After I realized it was probably 2018, I went back through the archives. The 2018 Fleet Updates thread contains a lot of GUM conversions at HOU during that timeframe, and the flight numbers were all in the same range. I didn't see a note for that particular flight, but if I had to put money on it. I'd say that it was on its way from GUM to HOU for conversion for regular fleet use.
