Wishing to book UA Miles award reservation from the US to Reykjavik via CPH, on SAS, but would like to stopover in CPH a few nights before continuing on to KEF. Is this possible?

On a one-way award, no -- it will price as two awards. On a roundtrip award (returning back from Europe to the US), CPH-KEF would count as the "Excursionist Perk" and you'd get it for free.

US-CPH
CPH-KEF
KEF-US
The middle segment should price at 0 miles.
This is all subject to availability and the vagaries of the UA award search tool.
