They will get you on the next available UA flight from SYD, they may also look for SYD-(BNE/MEL/AKL/CHC)-SFO options. If this is a paid ticket & with some persistence you can probably get them to re-route you on QF, assuming there are no seats on UA metal flights available.
UA will also pay hotels/meals as appropriate assuming the cancellation is 'controllable' (which most of them are on this route).

I don't know the answer specifically there, but what I do to guess is check next month's frequencies for each route against the frequencies of the month you're booking. Whichever route is farther away in frequencies is more likely to have the timings changed.

It may be too late for my brain to function properly (usually what happens when I open up FT in bed) but what do you mean by which route is farther away in frequencies?

An example: check MCI-ORD, see 5 nonstops per day in May, see 5 n.s. per day in December; check MCI-DEN, see 4 n.s. per day in May, see 5 n.s. per day in December — then I think MCI-DEN is more likely to be changed. If it had been 5/5 and 4/4 (respectively), then I'd start comparing time of day for each flight on the route.

A more general way to put fumje's suggestion is to compare the flight schedules for the routes you're considering (in your case, MCI-ORD and MCI-DEN) for the date you're traveling vs today/this month. Whichever route has the biggest discrepancy in schedule, whether it be daily frequencies or departure times, can be inferred to have a higher chance of schedule changes for far-out travel dates.

Just wanted to double check but I suspect the answer already.
UA flight scheduled change on ticket issued by Avianca. I need to go thru Avianca to make modifications if I don’t like the new flight UA rebooked? Anyway to work with UA directly?

Avianca issued the ticket; only Avianca can modify it prior to the day of departure.
