The F/As check the water and lav tank gauges as a backup check. They should be taken care of without the F/As checking but it's better to find out earlier rather than later if it is missed.

I believe the water in the lav sink and the coffee water come from the same tank. I don't consider either of them to be potable, but the airlines apparently do.
