If you fully tunnel on your VPN I don't know why Lync wouldn't work. Hopefully you join in listen only mode of course.

It's a corporate IM/voice/sharing tool (think AIM, but corporate). It's basically nothing like GV. Unsurprisingly, Wikipedia describes it well. The fact that you can't find decent marketing material is that it isn't being marketed to you.
In relation to using it for voice meetings on a plane: don't. Some reasons: 1) It probably won't work 2) if it does work, your quality will be awful. 3) You're being an inconsiderate bandwidth hog 4) your're being inconsiderately noisy. If you're just using it to IM chat, go nuts. I do it all the time.
