How long does it take to get a flight crew?

The status for flight 143 departing on 10/14 has been showing "Delayed - Awaiting Arrival of Crew" for at least the past two days. Do they really know that far ahead that they can't get a crew in time? Does it really take that long to get a crew in place?

So the 787 has been sitting in Nigeria the whole time waiting for crew, or?

No. The 787 got there on the 14th and was three hours delayed leaving, so it left LOS early on the 15th instead of the 14th, but the delay has been in the system for at least two days.

The reason I'm interested is because the aircraft is supposed to take us from DEN to NRT tomorrow (15th).

This is probably due to crew rest timing and hence why it has been listed for 2 days.

Your DEN - NRT flight tomorrow is still showing as on time. Aircraft arrives IAH around 7:30 tomorrow morning and departs for DEN at 9 AM so your flight out of DEN is on time your perfectly fine.
