I believe I read this somewhere, but can't find it now - so asking if anyone had an experience.
If you change/renew your ESTA, but keep the same passport - there is nothing in GE that you'd need to update?

Correct - indeed I had my ESTA lapse for about six months when living in Oz then re-applied before my last trip. Same passport number and GE continued to work absolutely fine.

Don't forget that you have to get an appointment on the schedule within 30 days of receiving your conditional approval. So if you can't find something suitable in the next 20 odd days, go online again around September 15 and book whatever is available as far in the future as possible at any of the many centres. Once you have that first appointment set up, you can keep checking back on GOES until you get something that suits your schedule. If nothing does prior to your booked appointment, just move that one out as far as possible into the future again and keep checking.

The GE/PassID KTN number shows up on the AA boarding passes? I've not seen my GE/PASSID KTN number show up on the boarding passes for any of my TSA PreCheck flights this year at least.

I don't think the KTN itself shows on my AA bps, but they certainly have "TSA pre-check" printed on them.
