Named after Dom Pierre Perignon, the monk and winemaker who is credited with having ďnvented Champagne. Moet et Chandon's Cuvee Dom Perignon is always a vintage wine from 100% Grand Cru vineyards, and is also the most iconic of all Champagnes. Pale gold in colour with aromas of fresh almonds and white summer fruits, both caressing and precise on the palate, it finishes with an expression of utmost elegance.

2013 Reichsgraf von Kesselstatt Piesporter Goldtropfchen Riesling Spatlese, Mosel, Germany
The Goldtropfchen vineyard in the village of Piesport is one of the most perfect suntraps in all of Germany - and it needs to be because Piesport is in the Mosel valley, where the Riesling grape only ripens when the vineyard is precisely angled to catch whatever sun there is. Goldtropfchen means "little golden drops" - and that's what you get from this south west-facing ampitheatre of vines, soaking up every last ray of summer sun. This beautiful wine isn't dry, but nor is it sweet, because a lovely lemony streak of acidity runs through its lush yet orchard-fresh compote of peach and apple and glistening Williams pear fruit.

2012 Kooyoung Chardonnay, Mornington Peninsula, Australia
The cool maritime climate of the Mornington Peninsula south of Melbourne is particularly well suited to growing chardonnay of exceptional quality. Made by highly acclaimed winemaker Sandro Mosele, this wine successfully combines freshness with complexity and is a fine example of the new wave of Australian Chardonnay that is attracting so much international attention.

2009 Louis Latour Chateau Corton-Grancey Grand Cru, Cote de Beaune, France
2009 was an exceptional vintage in Burgundy with a warm and sunny growing season that resulted in ripe and rich grapes. This wine has a bouquet of red summer fruits with autumnal tones and a touch of black cherry spice, smooth, almost velvety texture on the palate, lovely length of fruit that is robust and elegant on the finish. This flagship wine of Louis Latour has great aging potential.

2013 Clonakilla O'Riada Shiraz, Canberra, Australia
As a small family-owned winery located near Canberra where the climate is cool and in stark contrast to warmer wine regions of Australia, Clonakilla has a impeccable reputation for quality. Very much a modern style, this wine is medium-bodied, with vibrant pepper-spice characters and fruity notes. it is a quintessential "cool climate" Shiraz.

2007 Chateau Pichon-Longueville, Comtesse de Lalande, Pauillac, France
The larger of the two Pichon-Longueville estates, whose splendid 19th century chateaux face each other as one approaches the town of Pauillac, is known for the suppleness of its wines, due partly to the high proportion of very old Merlot vines. Part of the vineyard runs alongside that of First Growth Chateau Latour and a larger part border on the appellation Saint-Julien to the south, to provide the exceptional elegance in every vintage. The 2007 vintage already shows aromas of black summer fruits, natural rich flavours on the palate and a fine, dry finish.

Dow's 20 Year Old Port, Douro, Portugal
With twenty years of cask aging, this port has acquired a gorgeous aroma of dried flowers, toffee, sweet spices and dried figs. The tannins have softed and evolved into a silky texture with subtle, layered flavours that are persistent on the finish. 2014 Greywacke Sauvignon Blanc, Marlborough, New Zealand
Kevin Judd, the wine-maker behind the brilliant, mouth-watering 1985 Cloudy Bay Sauvignon Blanc, has created his own label. Greywacke - named after the big round stones that cover much of the Marlborough vineyard land. This vintage shows his enthusiasm and passion as the wine bursts with piercing apricot and lychee fruit shot through with the tingly acidity of gooseberry and lime zest.

2012 Louis Jadot Domaine Gagey Bressandes 1er Cru, Beaune, Burgundy, France
Beaune is above all a great red wine vineyard right at the heart of Burgundy, but there are a couple of patches of Premier Cru, tucked high up on the slopes above the town, that produce inspiring whites, and this tiny parcel of Bressandes vines, less than a hectare in size, gives wines of fantastic personality. 2012 is a vintage for dry, classic flavours, ripeness matched by mouthwatering acidity, and Bressandes has a savoury depth of roasted cashew nuts and oatmeal, smoothed by cream.

This splendid estate covering 80 hectares of vines in the best part of the Medoc, was named as a Second Growth in the famous classification of the best Bordeaux wines in 1855 and has retained this high status ever since. Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot are harvested at their peak of ripeness to make this classic "Bordeaux Blend". Deep carmine-ruby in colour, with fragrantly intense aromas of red and black berries, the rich concentration of fruit on the palate is balanced by an elegantly firm finish. It is eminently suited to white and red meats and of course perfect with cheese.

Sweet White Wine

Chateau Rieussec 2007
Chateau Rieussec, which is known as a top quality Sauternes wine, has over 200 years of history since Mareilhac acquired it in the early 19th century. Since the great wine classification of 1855 intended by Napolean III, Chateau Rieussec is attributed the title of First Growth among the Grand Cru of white wine in Bordeaux. The vineyard has 75 hectares of clay soil with special gravel and is planted with 90% of Semillon, each containing 5% Sauvignon Blanc and Muscadelle. This wine is produced by noble rots from vines aged for 25 years on average and aged in oak barrels for 24 months following the harvest. Chateau Rieussec 2007 is characterized by a rich and deep golden hue, with aromas of a hint of lemon dominated by tropical fruits and honey. This elegant and harmonious wine is a perfect accompaniment for your foie gras.

The result is an opulent wine with aromas of tropical fruits, citrus, pear, vanilla and roasted hazelnut. Its texture is full-bodied yet silky. Riesling Auslese 2007
It is a classical German wine from the best vineyards on the Rhinehessen, with tender bouquet, numerous fruit flavours. Chateau Clerc Milon, known for its excellent wines from the village of Pauillac in the Medoc region of Bordeaux, was acquired by Jean-Baptiste Clerc in 1789. Since the Bordeaux Wine Official Classification of 1855, requested by Napolean III, Chateau Clerc Milon has been counted as a grand crus, the highest classification. Chateau Clerc Milon's vineyard has 45 hectares (111 acres) of gravel, limestone, sand, and clay-based soil. It is planted with Cabernet Sauvignon (50%), Merlot (36%), Cabernet Franc (11%), Petit Verdot (2%), and 1% Carmenere (1%). This wine, a blend of five grape varieties, was made from vines with an average age of more than 30 years and aged in oak barrels for 20 months. Chateau Clerc Milon 2007 is characterized by an intense, bright red color, with woody hints dominated by floral notes and red fruits. This elegant wine with a long finish is a perfect accompaniment to your main course and cheese,

Speri Amarone 2010
Speri Amarone 2010 is produced in the Valpolicella district of Veneto by the Speri family, who owns the company that produces the best quality Amarone wine in Italy. The vineyard has calcareous, clayey soil on a hillside and is planted with 70% Corvina, 25% of Rondinella and 5% of Corvinone. Amarone is the product of a wine-making method of the Ancient Romans involving grape drying for 120 days before fermentation. The grapes lose 40% of their original weight and highly concentrated sugars. This wine is aged in oak casks for a period of 36 months and bottle-aged for 12 months. With a bright, intense ruby red color, a prominent aroma of ripe fruits, sweet and bitter cherries, and hints of plums tinged with spices, this full-bodied wine can be served with a range of dishes from pasta to meat.

Albert Bichot Vosne-Romanee 2011
With a priveleged location and plenty of sunshine, the village of Vosne-Romanee produces Pinot Noir red wine which is considered to be one of the best Cote de Nuits wines. Vosen-Romanee 2011 is made from the 100% Pinot Noir grown on the brown calcareous soils on limestone that brings a perfect natural drainage. This wine is produced from the vines of 20 years old in average and aged in oak barrels 20 months following the harvest. This wine has a very deep ruby color and carries aromas of small fruit and spice. Its taste is rich and structured on the plate, well balanced with a long finish.
