Champagne Henriot Brut Souverain
Brut Souverain is an elegant blend with a balanced proportion of Chardonnay from the Cote des Blancs and Pinot Noir from the Montagne de Reims, with a percentage of Pinot Meunier adding light notes of fruitiness and spice. Brilliant light straw gold, persistent and regular bubbles; precise, expressive and refreshing nose of citrus and yellow fruits, floral fragrances and pastry aromas (brioche, toast) follow; fresh and balanced on the palate, with a fullish texture and refreshingly dry finish.

White Wine

2010 Joseph Drouhin Saint-Veran, Maconnais, Burgundy, France
After Pouillu-Fuisse, Saint-Veran is the best appellation from the maconnais, the beautiful part of southern Burgundy with hillsides covered in the Chardonnay vine that has been planted in the region for hundreds of years. Lemon-yellow in colour, with an aroma of fresh apples and a touch of dry honey, supple and rounded on the palate with a refreshing lift of acidity on the finish. 2010 was a renowned year in Burgundy.

2010 Mud House Sauvignon Blanc, Marlborough, New Zealand
New Zealand's Marlborough region is home to many of the world's most distinctive Sauvignon Blanc wines, and Mud House is one of Marlborough's most respected producers. The grapes for this wine were grown in the sub-regions of Wairau, Awatere and Ure Valleys, and the wine made by Nadine Worley. This wine's racy and vibrant style has a strong international reputation and is typified by a lifted herbaceous leafy aroma and crisp mouthwatering acidity and wonderful freshness.

2011 Hunter's Sauvignon Blanc, Marlborough, New Zealand
The Marlborough region in New Zealand's South Island is home to some of the world's finest sauvignon blanc wines. This wine displays all the leafy, fresh and racy flavours typical of the region and won a Gold Medal at the Marlborough Wine Show. Not surprising, as Hunter's, run by the legendary Jane Hunter, has consistently made some of New Zealand's best wines for over 30 years.

Red Wine

2008 Tatachilla Shiraz - McLaren Vale, Australia
Shiraz is Australia's most famous grape variety - yet the style of wine produced varies greatly depending upon the specific climatic conditions of the region. McLaren Vale has dry and warm Mediterranean growing conditions so the Shiraz wines are ripe and full with a soft finish. The region close to the sea south of Adelaide is well known for its patchwork of olive groves, almond trees and vineyards. Whilst Tatachilla was established over 100 years ago it has undergone a major renaissance over the last 15 years and now produces some of the regions finest wines.

2008 Chateau D'Aurilhac Haut-Medoc
Chateau D'Aurilhac is a fine 21-hectare estate from one of the best communes in the northern Medoc, whose vineyards are 95% Cabernet Sauvignon and Merlot, and 5% Cabernet Franc and Petit Verdot. The deep carmine red colour leads to aromas of crushed summer berries with a hint of spice and the natural ripeness of flavour shows a classically firm finish with elegance and depth of fruit. 2008 was a good year in Bordeaux and this youthful wine will drink very well during 2012.

Fonseca Unfiltered Late Bottled Vintage 2005
The 2005 vintage was preceded by a series of intense heatwaves throughout the summer, followed by some welcomed rainfall which helped to round off the ripening of the crop. As a result, this vintage produced wonderfully intense and concentrated wines of black-red colour, dense plum and fig nose, full body and fruity finish, pure and direct.

Cuvee Dom Perignon 2002
2002 was a warm year in this illustrious region producing
beautifully full bodied and ripe wines. The Dom Perignon has an
intensely floral nose leading into the powerful yet creamy palate
wit h uncharacteristic peach, passion fruit and apricot fruits all
mingling in the flute with a subtle hazelnut and toasty finish. Aged
on the lees for seven years before disgorgement, followed by a
further year in bottle, this is drinking perfectly now.

White
Sancerre Exception 2007
Pascal Jolivet
Jolivet's ambition with Exception is to make a wine that could
be considered as a grand cru. Made from the finest quality hand
picked grapes exclusively selected from three of Sancerre's finest
vineyards - Chene Marchand, Mont Damne and Clos du Roy. which
lie on the chalky soils of the central vineyards. A subtle nose of
pear and citrus leads into an intensely mineral palate rounded with
a slight creaminess.
Leeuwin Estate Art Series Chardonnay 2006
Margaret River Western Australia
The Art Series Chardonnay has been best in class for well over a
decade now. It is to white Aussie wine as what Grange is to their
red. It fuses fresh and exuberant Western Australian fruit with an
almost Burgundian minerality and core. The 2006 poured here is
deftly balanced with pear. guava and spice lingering effortlessly on
a graceful. open textured frame. We are delighted to offer you a
glass of Australia's finest dry white wine.

Red
Chateau Duhart Milon Pauillac 2000
Duhart Milan is owned by the Rothschild family who also own
Lafite Rothschild, the most highly sought after wine in Bordeaux
at present, benefits from the same technical brilliance as applied
to its stablemate Lafite. The 2000, with a varietal break up of
roughly 80% Cabernet and 20% Meat is one of the finest ever
produced at the estate. A brilliant ruby colour leads to a youthful
nose, starting to show maturity as it enters its twelfth year. The
palate, dense with blackcurrant fruit, crushed rocks and pencil
lead, is round and sweetly textured, with ripe tannins and a long
lingering finish.
Kilikanoon Oracle Shiraz 2008
Clare Valley
Recently voted as a five star winery by Australian wine critic James
Halliday, Kilikanoon is fast approaching icon status in Australia. The
Oracle is a fine example of Clare Valley Shiraz. The 2008 has an
opaque purple-colour and a nose of toasty French oak, black fruits,
freshly cracked pepper and hints of violet. The palate is explosive,
exuding lashings of densely layered, rich but savoury black fruit
flavours and notes of coffee and chocolate.
The Factor Torbreck 2005
Barossa Valley
Rich and hedonist are two adjectives that don't even come close to
describing the Factor 2005, Torbreck's 100% Shiraz, sourced from
multiple sites across the Barossa Valley and aged for 24 months
in 50% new French oak. The opaque purple colour gives a pretty
good indication for what lies ahead. The nose delivers expressive
coffee, dark berries, licorice spice and black pepper. The palate
explodes in the mouth with blue and black berries, notes of spice
and leather emerge and a tingling mineral edge offers harmony to
the huge fruit. Voluptuous and full with warm climate style.

Dessert
Chateau Rieussec 2003
Sauternes
Devotees will need no introduction to this great wine. For the
novice, the chance to sip and savour the great 2005 Rieussec is
a treat and superb induction to the genre. Honeyed power, great
definition and excellent viscosity. Thick and juicy seem simple
words for such a spectacular wine, but that is what its like. Perfect
with foie gras or as a digestif after dinner, the extraordinary
flavours just go on and on.
Port
Quinta do Nova' 2000
Vintage Port
Purple, almost black in colour, the 2000 Vintage is a superbly rich
port oozing creme de cassis liqueur, gentle spice and notes of
licorice. Full bodied with intense concentration, notes of chocolate
and an utterly unctuous and silky finish. Perfect with blue cheese
and rich desserts.

Cuve Dom Perignon 2003
The 2003 Dom Perignon is a highly rich, powerful and vinous
Dom Perignon and unsurprisingly since the summer of 2003 was
the hottest in 53 years. The nose has two distinct sides - the light
floral candied fruit notes and darker, spicier, licorice aromas. A
mouthful of creamy, silky fruit, hints of praline and honey, is
under-pinned by a fine vivacious acidity and striking minerality.
The perfect way to start a flight, excellent with caviar and pretty
outstanding with shellfish and other fish dishes.

White

Robert Well Kiedricher Grafenberg 2010
Riesling Trocken Erstes Gewachs
The Robert Weil name has been synonymous with fine wine for
over a century. In fact the wines were supplied to numerous royal
courts of Europe in the late 1800s. The Kiedricher Grafenberg
vineyard is one of the finest vineyard sites in the Rheingau, first
documented in the 11th century as Mons Rhingravii, literally the
'Hill of the Rhine Counts'. Erstes Gewachs, which translates as 'first
growth', is limited to only the best vineyard sites of the Rheingau
specifically for the production of dry wines. This is a full-bodied,
dry-style wine, with a full, stony fruit aroma. The palate offers
a provocative balance of fruit, spice and flintiness, and while
weighty it is still very elegant, with extraordinary length to the
finish. A fine match for seafood but also surprisingly good with
red meats, due to its intensity of fruit.

Petaluma Piccadilly Chardonnay 2010
Australia
The Piccadilly valley, a sub region of the Adelaide Hills, sitting
at an average altitude of 500 metres, is the coolest in South
Australia. Brian Croser, the founder of Petaluma, was the first to
establish vineyards in the region, searching for a cooler climate,
almost Burgundian style of Chardonnay. Today the vineyards are
averaging 30 years old and the intense fruit is entirely hand-picked
to ensure maximum quality. A fine nutty and peachy nose leads
into a creamy palate of nectarines, ripe apples and grapefruit with
a stylish acidity. A wonderful partner to seafood dishes and rich
pasta dishes.

Red

Chateau Duhart Milon Pauillac 2000
Duhart Milon is owned by the Rothschild family who also own
Lafite Rothschild, the most highly sought after wine in Bordeaux
at present, benefits from the same technical brilliance as applied
to its stablemate Lafite. The 2000, with a varietal break up of
roughly 80% Cabernet and 20% Merlot is one of the finest ever
produced at the estate. A brilliant ruby colour leads to a youthful
nose, starting to show maturity as it enters its twelfth year. The
palate, dense with blackcurrant fruit, crushed rocks and pencil
lead, is round and sweetly textured, with ripe tannins and a long
lingering finish.

Picardy Shiraz 2008
Pemberton
Bill Panel' made his fame as owner of Mosswood, a leading
Margaret River winery and Australian icon, but then decided to
move to the cooler Pemberton region to focus on the Pinot Noir
and Shiraz varieties. The high altitude Shiraz from Pemberton is
far removed from the hotter Barossa style, and closer to the Rhone
style. The 2008 Shiraz, produced in a very traditional fashion,
gives an intense nose of blackberry and pepper as well as a hint of
violets. The full bodied palate is beautifully structured with velvety
tannins leading to a surprisingly long finish. This is a new wave
Australian red, focusing more on finesse than power and in turn
works superbly with food, ranging from red meats to cheeses.

Yering No. 2, 2006
Yara Valley
Dr Bailey Carrodus, founder of Yarra Yering in 1969, is responsible
for the revival of the Yarra Valley as a premium wine growing
region. As a botanist and expert in plant physiology with a degree
in winemaking he was well qualified to recognise the immense
potential for the region. The No 2 is a A Shiraz-based blend with
Viognier and Marsanne, the two white varieties used in Rhone
wines , added in very small quantities. The result is a beautifully
fragrant wine with great opulence on the palate, with mouthfuls
of rich black fruits, a whiff of spice and silky smooth tannins.
This exceptionally long wine is the perfect partner for meat stews,
steaks and other red meats.


Dessert

Chateau Rieussec 2003
Sauternes
Devotees will need no introduction to this great wine. For the
novice, the chance to sip and savour the great 2003 Rieussec is
a treat and superb induction to the genre. Honeyed power, great
definition and excellent viscosity. Thick and juicy seem simple
words for such a spectacular wine, but that is what its like. Perfect
with foie gras or as a digestif after dinner, the extraordinary
flavours just go on and on.

Port

Quinta do Noval 2000
Vintage Port
Purple, almost black in colour, the 2000 Vintage is a superbly rich
port oozing crème de cassis liqueur, gentle spice and notes of
licorice. Full bodied with intense concentration, notes of chocolate
and an utterly unctuous and silky finish. Perfect with blue cheese
and rich desserts.

Vintage Brut
A predominantly Pinot Noir blend with a dollop of Pinot
Meunier and one third Chardonnay which is responsible for the
wines flinty minerality. Beautifully effervescent in the glass,
pale gold in colour with hints of silver. The wine is silky and
generous in the mouth with bright yellow fruit flavours, notes
of acacia, brioche and marzipan with just a hint of spice on
the finish. An elegant, well crafted and complex effort by the
Veuve Clicquot maison. Perfect on its own as well as with fish
and poultry dishes.

White
L'Antique Sancerre 2010
Florian Mollet
Florian Mollet is the 10th generation of the Moller Maudry
family, vineyard owners in the Loire for centuries. A true
perfectionist and upholder of tradition, Florian is making some
cracking wines. The Antique cuvee comes from 55 year old
Sauvignon Blanc vines from their BeItins vineyard in Sancerre.
L'Antique is a beautifully crafted, fresh and crisp wine
displaying vibrant citrus, nettle and gentle smoky flavours.
Perfect with seafood.

Stag's Leap Karla Chardonnay 2008
Napa Valley
Napa Valley, once the producer of many different crops, is
known today for its wine industry, rising in the 1960s to the
first rank of wine regions. Stag's Leap Chardonnay is full of
aroma of mineral, apple, pear and spice lead to complex,
layered flavors of spiced golden apple and candied ginger, with
just a hint of hazelnut and caramel. This 2008 Karia charms
with its balance of ripe fruit, understated barrel spice, mouth-
filling texture and refreshing acidity. The wine ends with a
long, graceful finish and pairs perfectly with a wide range of
dishes such as crab, chicken and salmon.

Red
3 de Valandraud 2004
St. Emilion
Jean-Luc Thunevin, dubbed the 'Bad Boy of St Emilion for his
anarchic practices, and his wife Murielle started producing tiny
quantities of top quality wine in the late 80s with just 2,000
bottles. Today the production is significantly larger but still
small by comparison to its left bank counterparts. Les 3 is the
true second wine of Valandraud, named from Vat of Valley
of St Emilion and 'Andraud', the maiden name of Murielle. A
rich, intense and fruit forward wine with a delicate backbone
of silky smooth tannins with layers of complex red and black
berry fruits, a nose of sweet spicy vanilla, and an incredibly
long finish.

Northstar Merlot 2007
Columbia Valley
Northstar, located in Walla Walla, Columbia Valley, aims to
make Merlots that are considered among the worlds best,
using fruit sourced from one of the worlds best regions for
the varietal: Washington state. Winemaker David 'Merf' Merfeld
blends New World fruit with an Old World winemaking style,
influenced by Bordeaux's right bank, to create his highly
acclaimed wines. A seductive nose of raspberry, plum, vanilla
and coconut leads into a beautifully balanced palate of cherry
and notes of spice. The wine has a great finish with soft
tannins and pairs brilliantly with a range of red meats and
pasta dishes.

Port
Dow's 10 Year Old Tawny Port
Tawny is a style of Port often overlooked in favour of other
more traditional ruby styles. Such a shame since this is possibly
the best kept secret of the Port industry. A ruby Port is aged
for many years in small barrels which gives the wine its light
tawny colour after a period of time, and develops a beautiful
rich nuttiness with citrus peel and dried fruit flavours and
vanilla notes. Delicious with soft ripened cheeses, fruit tarts
and chocolate.

After Pouillu-Fuisse, Saint-Veran is the best appellation from the maconnais, the beautiful part of southern Burgundy with hillsides covered in the Chardonnay vine that has been planted in the region for hundreds of years. Lemon-yellow in colour, with an aroma of fresh apples and a touch of dry honey, supple and rounded on the palate with a refreshing lift of acidity on the finish. 2010 was a renowned year in Burgundy.

2010 Mud House Sauvignon Blanc, Marlborough, New Zealand
New Zealand's Marlborough region is home to many of the world's most distinctive Sauvignon Blanc wines, and Mud House is one of Marlborough's most respected producers. The grapes for this wine were grown in the sub-regions of Wairau, Awatere and Ure Valleys, and the wine made by Nadine Worley. This wine's racy and vibrant style has a strong international reputation and is typified by a lifted herbaceous leafy aroma and crisp mouthwatering acidity and wonderful freshness.

The Marlborough region in New Zealand's South Island is home to some of the world's finest sauvignon blanc wines. This wine displays all the leafy, fresh and racy flavours typical of the region and won a Gold Medal at the Marlborough Wine Show. Not surprising, as Hunter's, run by the legendary Jane Hunter, has consistently made some of New Zealand's best wines for over 30 years.

2008 Tatachilla Shiraz - McLaren Vale, Australia
Shiraz is Australia's most famous grape variety - yet the style of wine produced varies greatly depending upon the specific climatic conditions of the region. McLaren Vale has dry and warm Mediterranean growing conditions so the Shiraz wines are ripe and full with a soft finish. The region close to the sea south of Adelaide is well known for its patchwork of olive groves, almond trees and vineyards. Whilst Tatachilla was established over 100 years ago it has undergone a major renaissance over the last 15 years and now produces some of the regions finest wines.

2008 Chateau D'Aurilhac Haut-Medoc
Chateau D'Aurilhac is a fine 21-hectare estate from one of the best communes in the northern Medoc, whose vineyards are 95% Cabernet Sauvignon and Merlot, and 5% Cabernet Franc and Petit Verdot. The deep carmine red colour leads to aromas of crushed summer berries with a hint of spice and the natural ripeness of flavour shows a classically firm finish with elegance and depth of fruit. 2008 was a good year in Bordeaux and this youthful wine will drink very well during 2012.

Fonseca Unfiltered Late Bottled Vintage 2005
The 2005 vintage was preceded by a series of intense heatwaves throughout the summer, followed by some welcomed rainfall which helped to round off the ripening of the crop. As a result, this vintage produced wonderfully intense and concentrated wines of black-red colour, dense plum and fig nose, full body and fruity finish, pure and direct.

One of the most prestigious estates in Germany's Rheingau region, Balthasar Ress was founded in 1870 at Hattenheim, already famous for its Rieslings of exceptional quality. This is sourced from the estate's finest steeply terraced vineyards, the different wines being carefully blended to complement one another perfectly to represent the floral fruitiness of Hattenheim. Light lemony yellow in colour with a lovely palate of ripe summer fruits, fresh acidity balancing the slight sweetness, a wine of great purity and quality.

Weinhaus Ress of the famous Balthasar Ress estate has produced this wine to the expectations of international connoisseurs, balancing fresh flavours, low acidity, and making it a light style Riesling. Although 2010 was a very low yield vintage, the great care taken transporting the hand-harvested grapes directly into the wine press, enabled green apple aromas, lively fruit, racy acidity and a touch of distinct minerality. A great wine to be enjoyed with white meats and spicy Asian food.

Barbera is one of the famous 3 Bs from Piedmont, the others being Barbaresco and Barolo and is unique in being named after the spicy red grape that it is made from. The GD Vajra estate has six different vineyards, the best of which goes to make this wine whose aromas of black berry and cherry fruits leads to vigourous yet smooth flavours on the palate and a naturally firm finish. 2008, an excellent vintage in Piedmont, is now drinking beautifully.

2008 Brolio Chianti Classico Tuscany, Italy
The Ricasoli family built the historic Castello di Brolio in 1141 and the ancestor of current owner Barone Francesco Ricasoli laid down the rules for the wines of Chianti in the late 1800s. Produced principally from Tuscany's most famous grape variety Sangiovese that gives the intense ruby colour, the wine shows aromas of red berry fruit with liquorice spice, great depth of flavour on the palate with a velvety yet firm finish. 2008 was an excellent vintage that is now showing its best.

2008 Chateau D'Aurilhac Haut-Medoc
Chateau D'Aurilhac is a fine 21-hectare estate from one of the best communes in the northern Medoc, whose vineyards are 95% Cabernet Sauvignon and Merlot, and 5% Cabernet Franc and Petit Verdot. The deep carmine red colour leads to aromas of crushed summer berries with a hint of spice and the natural ripeness of flavour shows a classically firm finish with elegance and depth of fruit. 2008 was a good year in Bordeaux and this youthful wine will drink very well during 2012.

Fonseca Unfiltered Late Bottled Vintage 2005
The 2005 vintage was preceded by a series of intense heatwaves throughout the summer, followed by some welcomed rainfall which helped to round off the ripening of the crop. As a result, this vintage produced wonderfully intense and concentrated wines of black-red colour, dense plum and fig nose, full body and fruity finish, pure and direct.

The Ricasoli family built the historic Castello di Brolio in 1141 and the ancestor of current owner Barone Francesco Ricasoli laid down the rules for the wines of Chianti in the late 1800s. Produced principally from Tuscany's most famous grape variety Sangiovese that gives the intense ruby colour, the wine shows aromas of red berry fruit with liquorice spice, great depth of flavour on the palate with a velvety yet firm finish. 2008 was an excellent vintage that is now showing its best.
2008 Chateau D'Aurilhac Haut-Medoc
Chateau D'Aurilhac is a fine 21-hectare estate from one of the best communes in the northern Medoc, whose vineyards are 95% Cabernet Sauvignon and Merlot, and 5% Cabernet Franc and Petit Verdot. The deep carmine red colour leads to aromas of crushed summer berries with a hint of spice and the natural ripeness of flavour shows a classically firm finish with elegance and depth of fruit. 2008 was a good year in Bordeaux and this youthful wine will drink very well during 2012.

Fonseca Unfiltered Late Bottled Vintage 2005
The 2005 vintage was preceded by a series of intense heatwaves throughout the summer, followed by some welcomed rainfall which helped to round off the ripening of the crop. As a result, this vintage produced wonderfully intense and concentrated wines of black-red colour, dense plum and fig nose, full body and fruity finish, pure and direct.
