Thanks very much 1P. All the wine pairings were wonderful although it is now, 4 weeks later, hard for me to recall each as the entire Odette experience was a bit overwhelming and exhausting as RayG notes. Some Vivino reviewers have opined that the Alain Voge Cornas, while still young, is "stupidly good".
Sadly, that dreadful dish is listed as a Lafer Selection which does suggest a pretty strong connection.

Indeed a bit exhausting after three hours. But I would absolutely go back again in a heartbeat. And Le Bernardin, while excellent, left us thinking that we'd probably not go back. Service overall was very good but it was the wine pairing and the attitude of the sommelier that day that put me off, especially the minuscule pours which led to me rationing my tasting to make sure I had enough left to enjoy with each dish. Just struck me as stupid cheap. If it's a cost thing, charge more and give me a proper pour without having to flag down someone for a top-up.

Very good TR, SFO777 ! Amazed that the Alain Voge Cornas 2018 at Odette was drinkable at such a young age. Unless he's adopted a lighter style for export to Asia, you'd normally need to wait another five years or so for the tannins to smooth out. I've not encountered that particular Savoyard wine from Giachino, and it's not listed on their website. How was it?
Austrian tho he may be, he is a fairly known TV chef in Germany. This would suggest he had some hand in those creations.

A typical Lafer. Johann Lafer is known in Germany primarily for his cookbooks (which are undoubtedly good), TV shows, commercials and the "creation" of conveniance meals. With the Stromburg, he also had a hotel with gastronomy, in which there was a star restaurant in the past.
While Lafer was and is very present in the media, he never had a prominent culinary significance for me in Germany. For me, other people such as Witzigmann, Winkler, who unfortunately died recently, Wissler, Jürgens or Müller are more influential.

I was fortunate enough to meet Julien Royer himself this summer (at an SQ PPS event no less). He dished out a similar tasting menu as he was doing a pop up in Europe. He was very humble for someone who has got successful at such a young age!

I acknowledge that that trip is mainly for flying and eating is just a "side product".
Last week I went back to 7th in the world rank, they just launched a "summer menu" Paid 45usd for 9-course menu.
When you someday choose food before flying then Lima is "to go" place. In the current rank, 2nd, 11th, 32nd and 68th are located there. Not much comfort to fly there but the food worth it, according to my "fine dine fan " friend. Mexico city is even closer option with 5th and 9th in the rank.
I acknowledge that that trip is mainly for flying and eating is just a "side product".

Outstanding trip report and photos, as usual. Both restaurants look amazing and I will endeavor to visit. BTW, being Adelaide born-and-bred I must say a nice call on the Coopers Ale :-)

What a stunning report! Top notch as usual. It's been years since I have done fine dining in SG as I am always drawn to the amazing hawker stalls. My problem with SG is there are too many wonderful food options and never enough time. Your pics definitely have made me rethink my strategy.

Thanks stevie. Indeed, none of the meals were cheap but apart from the aggressive wine fume pairing prices at Le Bernardin, I thought the prices were reasonable for the quality and experience.
Thank you Harper50505. Totally agree. SQ does seem to be trading on its past glories. I consider SQ now to be a mid-tier international First airline, well behind Emirates, Air France, Swiss, ANA and JAL.

Yeah, that's not going to work. J only flights and DEN-CDG-LIM is a long, long way.
Good luck on that. Other than Noma, Burnt Ends is the toughest reservation I've ever seen. They open reservations at 10am Singapore time 30 days in advance. And at 10:00:20a everything is gone. I tried a few days in advance just to understand how to. In the end at 30 says before the date we wanted, I didn't waste time changing the default reservation time or trying to enter my +1 phone number. I just cut and pasted my SG hotel number, saved a few seconds and got past the initial stage. At that point, you can relax and enter your CC info.

Great report. Helps with my planning as I'm doing the SIN-NRT leg in Feb but ending there so no transit fun. Where were you planning on eating next visit? I've got my eye on Thevar and Revolver. I'll be by myself so I'm a bit constrained by restaurants with bar style seating.

Now this is my kind of trip. Best I managed was 6 total stars on a 2 week trip. I'd say come check out some of the Michelin star places in Chicago. Truly inventive stuff going on here.

What did you think of the Virgin Atlantic Clubhouse at JFK?
I tried SQ for the first time a couple of months ago - London to Singapore and back in J. It was a great experience - the trip report on that is coming soon. It’s a shame some of the food on your FRA-SIN sector was a let down though, and that breakfast was the only thing offered on SIN-NRT.
Did you get escorted in SIN from F check-in to TPR? The ground experience doesn't seem as good as something like AF, LH or LX F.
