Does anyone know of an internet service similar to Yahoo's fare watcher that will allow a traveler to track fares for specific travel dates. I'm frustrated with the wild goose chasing required by Yahoo.

Orbitz has a date-specific feature.

Expert Flyer will do this in their saved itinerary section, and then you can just check your specific request daily by clicking on it.
