Most recent exotic lines include

Belavia (Minsk-WAW) with video of collective farmers singing happy songs in business class cabin where KGB thug and I were sole passengers and
Ukraine Int'l (FRA-LWO), where lunch consisted of cold fish cake (yum!) and cold peas. Style all the way...

Ah! New York Air!
My vote for the best [email protected] airline food -- authentic NY bagel and cream cheese!

Of the less common and more obscure airlines
Business Express
Gulf Air
EuroFLy (not to be confused with SuperFly )
Air Dolomiti -- Italian domestic
JamAir -- domestic Jamaican airline, lasted about 5 minutes (for good reason)
Ethiopian Airlines
Redbird Airlines -- domestic Bahamian airline
Sunbird Airline -- domestic Kenyan airline
Royal Swazi Air -- Swaziland
ComAir -- domestic Swazi airline
Harbour Airlines -- seaplane between Vancouver and Victoria
