I am off to Europe from Sydney,
I have never flown before and was wondering can i tell QANTAS what seat i want ?

Please do not think i am stupid just never been on QANTAS before.

Appreciate your help.

From Sydney to Europe is certainly a way to take a first flight.

Yes, you can call and request seating assignments ahead of time. Check the seat guru site to see which seats are better then others (they have a seating plan for a Quantas 747, some of the seats are great, some average), and call and ask if those are available.
