Either 8 or 9 depending on how you count.

Antigua & Barbuda - St. John’s
Canada - Ottawa
Italy - Rome
Mexico - Mexico City
Saint Lucia - Castries
Scotland - Edinburgh (almost a country?)
United Kingdom - London
United Arab Emirates - Abu Dhabi (most recent)
Vatican City - Vatican City (knock on wood)
And get to add Tokyo by the end of this year!

In terms of countries, I sadly have not seen the capitals of Morocco, the USA, Germany, France and the Netherlands yet.

Ankara, Turkey
Canberra, Australia
Pretoria, South Africa
Agana, Guam
Brasilia, Brazil
Windhoek, Namibia
Kiev, Ukraine
Suva, Fiji
Gaborone, Botswana
Islamabad, Pakistan
Sarajevo, Bosnia
Tegucigalpa, Honduras
Naypyitaw, Myanmar
Lilongwe, Malawi
Harare, Zimbabwe
Luanda, Angola
Roseau, Dominica
Ramallah, Palestine
Quito, Ecuador

By that count, I've been to 136 other world capitals (but that includes some territories, not sovereign countries)

If a "country" is defined by the existence of ISO region code, then among the 25 countries I have visited, I have visited 12 capitals:
Hong Kong - Victoria City
Macau - Macau
Singapore - Singapore
China - Beijing
Latvia - Riga
Estonia - Tallinn
Czechia - Prague
Finland - Helsinki
Egypt - Cairo
Thailand - Bangkok
Vietnam - Hanoi
Sweden - Stockholm

with transfers at the following capitals:
Russia - Moscow
South Korea - Seoul
Lithuania - Vilnius
Azerbaijan - Baku
Bulgaria - Sofia

32-33 for me but I've been to one of the more-obscure ones: Capital of Belize. Also went to Bonn in the smaller BRD/FRG.

For some reason, I always thought Pretoria was the capital of South Africa.

It's one of them. Cape Town, Pretoria, and Bloemfontein.

It's the administrative capital, Cape Town is the legislative capital (Parliament sits there.) So yes and no.

35 for me, including a couple from the former USSR that weren't independent countries when I was there, Tashkent and Dushanbe.

*Berlin Hauptstadt der DDR (East Berlin) - Berlin was not the capital of the Federal Republic at that time.
**If transiting an airport counts. I was admitted through immigration since I was connecting to another Schengen country.
