Nope:
NZ had no ID checks at all when I was there (never mind no security on the turboprops).
In the US the TSA can verify your identity without you carrying ID.
(Schengen flights usually have no ID checks, but you should still be carrying ID in theory. But for domestic flights within some Schengen countries you really don't need ID at all.)
The UK does require at least a driver's licence though, so you're correct in that case.

I've been asked for a passport on domestic flights in Europe.
I don't know about New Zealand but in theory an airline could ask for ID.

I guess I don't have any one particular item that I have to have, that's common to every trip...not counting mandatory things like a passport/visa in some instances, where the trip wouldn't start without it. My minimum equipment list varies depending on whether it's business, domestic, international, solo vs. with wife, etc.
If I had to choose only one thing to bring with me, aside from the clothes on my back and a passport/visa where applicable, I'd choose my wallet. I have several credit cards, debit, insurance cards, drivers license, etc. inside. And with that I can buy/rent whatever I need at my destination and also obtain currency.
