so here's my conundrum : does visiting Hong Kong count as having been to China?

In my book, it only counts as China if the visit was after the handover. If you visited before July 1, 1997, you only visited Hong Kong. You can, of course, make up whatever you want your rule to be!

I have been to Somaliland and Transnistria neither of which have UN membership. They do have their own borders, immigration, visas and currency, so I count them separately from Somalia and Moldova.

For basically the same reasons (plus the ISO codes) I count Gibraltar despite their lack of UN membership. Ditto for Hong Kong, Macau, and Taiwan.
