iPhone X - Trouble Staying with Wifi Signals

Any tips? Compared with my MacBook Pro at the same locations, the iPhone X often sees a signal, joins it after I check the right entry, then drops off the signal after a few seconds. Very annoying - my cell data usage is mushrooming and this definitely won't work overseas.

I've not had this issue. You may want to take it to apple for exchange.
