Adding a lap child after stopover on an award
 
Is it possible?

For example if I book HKG-LAX (stopover) - YVR (or smth domestic), can I travel HKG-LAX by myself and add a lap infant for the last leg?

This may depend on the airline, but, IME, you can add lap infants on a segment by segment basis---just like a pet, special meal, or any other special service.

I have heard from others that this can be done, although I've never done it. Sounds reasonable though.

Although probably not a stopover, I would think it would come up with some frequency on adoptions.
