I'm always very hesitant to recommend places based on just one visit but I must say I was pretty impressed by Sunbird BBQ on US-259 north of Longview. Former pitmaster of the formerly good, original location of Bodacious (the one on Mobberly Ave, other Bodacious locations in E TX are separately franchised)

Sunbird is a food truck setup with smokers behind the food truck, not a bricks and mortar BBQ joint. They have a few picnic tables so you can eat onsite on a nice day. I thought their brisket was truly outstanding the day I stopped by. The other meats were good (not great) but the brisket was the standout.

Sunbird is well worth a visit when anyone passes through the Longview area.

Also violating my "don't recommend based on one visit" rule I thought Terry Black's BBQ Dallas location in Deep Ellum was quite good too. Huge, cavernous restaurant (with huge rooftop to boot) on the east end of Deep Ellum so I was worried the sheer size of the place indicated mass production and tourist trap. On the contrary, I was impressed.

I've heard that Pecan Lodge has been going downhill for a couple years now so Terry Black's could replace Pecan Lodge as the place to go near Downtown DAL and Deep Ellum. I haven't personally been to Pecan Lodge in a couple of years so I'd love to hear confirmation that it's no longer what it once was and now should be skipped.

Whereas I take issue with the title of the thread, I take no issue in bbq recommendations.

I liked Pit Stop Smokehouse in Harlingen, for their brisket and relaxed atmosphere. But I really need to rent a car and just eat around the state.

Select start and end airports and put up a DO thread in CommunityBuzz if you want some FTers on such a voyage of discovery and eating.

Pinkerton our champ on recent swing thru Austin-S.A.

Putting in my two cents for Pinkerton. Hit the downtown location in San Antonio 2x on a recent trip. Outstanding. Brisket, pulled pork & ribs were all top notch as well. Good margaritas. Our kids were obsessed with the Mac & cheese that had a hint of rosemary, hence the return trip for lunch before the flight home.

Did the food truck (forgetting name - J&B?) at Cosmic in Austin on a Sunday afternoon. Waited 1.5 hrs in line on strength of a Texas Magazine ranking only to have the couple in front of us get the last brisket order. Barbacoa was nevertheless very good, and the location on a sunny February afternoon in the 60s was great.

Also did Salt Lick in Driftwood and was underwhelmed. No wait for lunch mid-week but the brisket was dry.

We're going to Texas for Easter. 3 nights in Austin and 1 in San Antonio. Where should we go to eat amazing bbq without having to spend hours queuing? I know this way we might miss out on some of the absolute best, but we have limited time!

Since you don't have any replies yet, I'll start things off. I'll preface this with I'm a horrible Texas barbecue person (I don't eat cow or pig), but I have had these...

* Franklin Barbecue: I'd recommend that you order in advance and get it to go. If you can, have 2 people go to pick up; driver drops off the person to actually get everything (just in case you can't easily find parking). I only went once, for a private event (dinner), and thought it was ok, and I'd never wait hours for it.
* The Salt Lick BBQ: I've been to the one in Round Rock and also ordered from the airport location. I've heard that the Driftwood location is a true experience, so that might be something to look into (it is a hike from town). The Round Rock location was just like a big restaurant, and right near the Dell Diamond.

I'm sure that others will chime in.

Franklins - Best Ribs and you can order online for pick up, 5lbs min
Snows - Will have to queue. IMO they had the best brisket
Valentinas - Really good tex mex bbq, not too much of a line
