When I need to edit a post that has quoted text, the window where the post is displayed is very small, forcing me to have to scroll down for ages....

Strangely, my old Palm TX was better at this, since it would pop open a second window to make the edit much easier to do.... Why does my N97 not do the same...?

Different phone browsers work in different ways. Perhaps just a limitation of the N97?

It is not a limitation of the phone. It is a function of the code on the mobile site. The server specifies the size of the text box that you get for replying or editing a post. And that box has to fit on a rather wide variety of devices so they cannot make it too big.
